Gum Paste, Modeling Paste, & Modeling Chocolate

FAQ: What's the difference?

Gum Paste is a paste developed with the firmest bonds that allows the paste to dry hard and firm, once it's dry there's no correcting mistakes! While edible, Gum Paste is firm to the touch when completely dried and is not recommended for consumption. Typically used for flowers.

Modeling Paste is a paste developed with firmer starches including potato starch that allows the paste to retain its shape while still being forgiving enough to fix mistakes and consume. Ideal for 3D toppers and smaller edible pieces, including flowers. Great for people with warmer hands!

Modeling Chocolate is paste developed with chocolate and/or cocoa butter that helps the paste retain its shape while still being soft enough to fix mistakes and consume with minimal effort. Great for 3D toppers and smaller edible pieces with a delicious flavor profile. Great for people with cold hands!
